This is the ninth edition of the Heinz Handbook of Nutrition, published in 2003 and edited by David L. Yeung and Idamarie Laquatra. It contains in depth information about nutrients and nutrition as well as tables which list examples of each. There are chapters on proteins and amino acids, carbohydrates, lipids, vitamins, minerals, dietary standards and general nutrition. The language is aimed at NVQ level 4 or above and is therefore a good resource for teachers. As well as a general references, each chapter features suggested readings.
